1) Peel the boiled potatoes in their skins, transfer to a bowl and turn into mashed potatoes. For this recipe, peeled boiled potatoes or the remaining mashed potatoes are suitable. To the mashed potatoes add the egg, salt to taste, add turmeric to color and curry flavor for taste. If you don't like curry, add other spices or don't add anything at all. Stir the potato mass and add the flour, intervening in parts. The potato dough will turn out soft, sticky inside, but you should not add more flour, otherwise the noodles will turn out hard.

2) The table must be well sprinkled with flour. Roll out the dough into a layer 4-5 mm thick. Dust the flour on top with flour and cut the dough with a knife into thin strips in one direction, then in the opposite, you should get small ribbons 1-1.5 cm wide, 4-5 cm long.

3) As soon as the water in the pan boils, salt, stir and send the noodles to the pan. It is convenient to take it with a scraper for dough or a knife with a large blade. As soon as I dip the noodles into the water, cook it exactly 5 minutes and take it out. Serve with butter, sour cream, sprinkle with chopped herbs. The noodles were very soft and tender.
