Ingredients for Making Tomato Soup with Croutons
- Tomatoes 1 kilogram
- Onion (onions with feathers) 1 piece
- Garlic 1 clove
- Vegetable oil 1 tablespoon
- Salt 1 teaspoon
- Water or broth 400 milliliters
- Basil to taste
- Oregano to taste
- Sugar 1/2 teaspoon
- Ciabatta 4-5 slices
- Olive oil 2-3 tablespoons
- Mozzarella 100 grams
- Basil to taste

Bakeware, blender, tablespoon, kitchen knife, cutting board.
Step 1: chop the vegetables.
Rinse vegetables and fresh herbs. Then chop the tomatoes and onions into large pieces, and pick the fresh oregano and basil with your hands.
Peel the garlic clove. Send one half to tomatoes with onions and herbs, and put the rest to the ciabatta.
Step 2: bake vegetables.
Place the tomatoes, onions, oregano, basil and chopped half of garlic in a deep baking pan. Sprinkle with salt and sugar, pour over vegetable oil and put in a preheated (medium heat) oven on 30 minutes.
Step 3: add broth or water to the vegetables.
After half an hour, pour in the baked vegetables about 400 milliliters hot water and put everything in the oven again on 20 minutes.
After chop the vegetables and herbs with a blender, turning everything into a soup puree.
If necessary, you can add more fluids at the end or in the process.
Step 4: prepare croutons.
Pour the slices of ciabatta with olive oil, and sprinkle with grated cheese on top and put the basil leaves (if you use mozzarella, you can leave it in large but thin slices).
Put the slices of bread in the preheated oven on 7-10 minutesuntil the cheese melts.
Ready croutons can be cut into cubes or left like that.
Step 5: serve tomato soup with croutons.
Pour the tomato soup into plates and place it on top of the croutons. You can serve soup with cold sour cream or natural yogurt. A delicious summer meal for lunch for the whole family.
